  • 1 lb lean ground turkey (pavo)
  • 1 cup quinoa, rinsed
  • 2 cups low-sodium chicken broth
  • 1/2 cup plain Greek yogurt (probiotic source)
  • 1/4 cup finely chopped fermented carrots (probiotic source)
  • 1 small zucchini, diced
  • 1/2 cup mild roasted red peppers, chopped
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp mild paprika
  • 2 tbsp olive oil
  • Fresh cilantro for garnish (optional)

  1. Rinse quinoa thoroughly under cold water. In a saucepan, combine quinoa with chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork and set aside.
  2. While quinoa cooks, heat olive oil in a large skillet over medium heat. Add ground turkey and cook until no longer pink, breaking it into small pieces.
  3. Add diced zucchini, roasted red peppers, cumin, oregano, and paprika to the turkey. Cook for 5-7 minutes until vegetables are tender but not browned.
  4. Remove skillet from heat and stir in Greek yogurt until well combined, creating a creamy, mild sauce.
  5. Fold in cooked quinoa and fermented carrots gently to distribute evenly without breaking the quinoa grains.
  6. Divide into 4 small portions (for high-frequency meals). Garnish with fresh cilantro if desired.
