  • 12 oz large shrimp, peeled and deveined
  • 4 cups kale, stems removed and chopped
  • 3 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 2 tbsp olive oil
  • 1/4 cup sliced almonds
  • 1/2 tsp red pepper flakes
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

🔥 Preparación

  1. Heat 1 tbsp olive oil in a large skillet over medium heat. Add sliced almonds and toast for 2-3 minutes until golden. Remove and set aside.
  2. In the same skillet, add remaining olive oil. Add shrimp, half the garlic, red pepper flakes, salt, and pepper. Cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  3. Add kale to the skillet with remaining garlic. Sauté for 3-4 minutes until wilted but still vibrant.
  4. Add lemon juice and zest to the kale, stirring to combine. Cook for 1 more minute.
  5. Return shrimp to the skillet, gently mixing with kale. Top with toasted almonds and fresh parsley before serving.
