Sweet Potato and Vegetable Gratin with Herbs

Light French recipe rich in insoluble fiber to relieve chronic constipation. Prepared with sweet potato, vegetables, and fresh herbs.

🥕 Ingredientes

  • 4 medium sweet potatoes (about 800g), peeled and diced
  • 2 carrots, cut into thin slices
  • 1 zucchini, diced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, chopped
  • 200g of broccoli, in small florets
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and ground black pepper to taste
  • 50g of light grated cheese (optional)
  • 2 liters of water (for forced hydration, to be consumed with the meal)

🔥 Preparación

  1. Preheat the oven to 200°C (thermostat 6-7).
  2. In a large bowl, mix the diced sweet potatoes, carrots, zucchini, onion, garlic, and broccoli with olive oil, thyme, rosemary, salt, and pepper.
  3. Arrange the vegetables in a gratin dish and bake for 30-35 minutes until tender and lightly golden.
  4. Sprinkle with grated cheese (if used) and broil for an additional 5 minutes.
  5. Serve hot with a large glass of water to follow the forced hydration.
