Light French recipe rich in insoluble fiber to relieve chronic constipation. Prepared with sweet potato, vegetables, and fresh herbs.
🥕 Ingredientes
- 4 medium sweet potatoes (about 800g), peeled and diced
- 2 carrots, cut into thin slices
- 1 zucchini, diced
- 1 onion, thinly sliced
- 2 cloves of garlic, chopped
- 200g of broccoli, in small florets
- 1 tablespoon of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and ground black pepper to taste
- 50g of light grated cheese (optional)
- 2 liters of water (for forced hydration, to be consumed with the meal)
🔥 Preparación
- Preheat the oven to 200°C (thermostat 6-7).
- In a large bowl, mix the diced sweet potatoes, carrots, zucchini, onion, garlic, and broccoli with olive oil, thyme, rosemary, salt, and pepper.
- Arrange the vegetables in a gratin dish and bake for 30-35 minutes until tender and lightly golden.
- Sprinkle with grated cheese (if used) and broil for an additional 5 minutes.
- Serve hot with a large glass of water to follow the forced hydration.
