- 200g cooked and shredded chicken breast
- 1 cup plain unsweetened Greek yogurt
- 1 medium avocado cut into cubes
- 1 ripe mango cut into cubes
- 1/2 cup cooked quinoa (complex carbohydrate)
- 1/4 cup chopped red onion
- 2 tablespoons fresh chopped cilantro
- Juice of 1 lemon
- Salt and black pepper to taste
- Lettuce or arugula leaves for serving
🔥 Preparación
- Cook the chicken breast until tender, shred it, and set aside.
- In a large bowl, mix the Greek yogurt with lemon juice, salt, and pepper to make the dressing.
- Add the shredded chicken, avocado, mango, cooked quinoa, red onion, and cilantro to the bowl with the dressing.
- Gently mix until all ingredients are well incorporated.
- Serve over fresh lettuce or arugula leaves.
- Garnish with cilantro leaves if desired, and serve immediately.
