  • 200g cooked and shredded chicken breast
  • 1 cup plain unsweetened Greek yogurt
  • 1 medium avocado cut into cubes
  • 1 ripe mango cut into cubes
  • 1/2 cup cooked quinoa (complex carbohydrate)
  • 1/4 cup chopped red onion
  • 2 tablespoons fresh chopped cilantro
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Lettuce or arugula leaves for serving

🔥 Preparación

  1. Cook the chicken breast until tender, shred it, and set aside.
  2. In a large bowl, mix the Greek yogurt with lemon juice, salt, and pepper to make the dressing.
  3. Add the shredded chicken, avocado, mango, cooked quinoa, red onion, and cilantro to the bowl with the dressing.
  4. Gently mix until all ingredients are well incorporated.
  5. Serve over fresh lettuce or arugula leaves.
  6. Garnish with cilantro leaves if desired, and serve immediately.
